  • 90 min
  • 8–10 guests

A fast, funny and very hands-on introduction to building a main-course salad with real structure: a confident base, a dressing that actually clings, something crunchy, something creamy and a finish that looks like you meant it.

You’ll make: Charred broccoli with whipped feta and hot honey hazelnuts · Torn-leaf salad with burnt-orange and mustard vinaigrette · Quick-pickled red onions and a crunchy seed crumb

Five sauces that will quietly improve everything you cook for the rest of the year.

  • 2 hrs
  • 8–10 guests
